An understanding of the process by which consumers match consumption choices to personal values is powerful aid to guide strategic market orientation. It is of particular importance in the highly saturated food markets of developed countries, where consumer needs are shifting closer and closer towards the search for quality and emotional benefits. This study sets out to explore variation in the consumer choice structure in relation to three products with different levels of search, experience and credence attributes, using means-end chain theory. Recent food scares in the food market has caused a reduction in consumer's confidence in the food system that it has induced a significant reduction in consumption in a sector, the beef sector that was already characterized by a saturated trend in quantity terms. In this context, all participants in the beef production system are facing to a great challenge, to retrieve consumer's confidence in the food chain and to mitigate the reduction in beef consumption. Connecting Product Attributes with Emotional Benefits. Analysis of a Mediterranean product across consumer age segments AgEcon

Due to a high level of product substitution in the food market, it often proves difficult to strike a balance between supply and demand. This is especially true in sectors with a such high level of competition and product differentiation as the wine producing sector. Faced with the difficulty of differentiating the product in terms of its technical characteristics, quality and price, therefore, a useful alternative is to explore what consumers perceive to be its "emotional benefits", since these have been shown to have a decisive effect on consumer purchasing decisions. Consumers in developed countries are becoming increasingly aware of food safety, that is to say, the influence of food on human health. The public concern is deeper for those products, such as beef, that have suffered gravely from disease (BSE). In this paper, the factors that influence the decision of purchasing two products, fresh lamb and beef, are investigated. The linkage between quality labels and attributes of food safety is also studied. Finally, the conjoint analysis is used to discern differences in preferences between consumers of labelled meat and non-consumers and to estimate the marginal willingness to pay for the main attributes, in particular, for the quality label. In recent years, consumer concerns on environmental and health issues related to food products have increased and, as a result, the demand for organically grown production has grown. Higher costs of production and retailer margins generate a gap between real prices and those that consumers are willing to pay for organic food. In this article, consumer willingness to pay for organic food in two Spanish regions is analyzed. Markets in both regions are segmented considering consumers lifestyles. Results indicate that consumers concerned about healthy diet and environmental degradation are the most likely to buy organic food, and are willing to pay a high premium. A quality differentiation strategy for agrifood products based on geographical origin and production method has become a viable alternative for certain firms in the internationalized food markets, if it could be considered as a rural development instrument. Trust in Label Information to Recuperate Consumer's Confidence for Meat: A Compared Analysis among Canada, Italy, and Spain AgEcon

The analysis consisted in a field experiment performed by testing the opinions of different consumers groups: two of them located in the European Regions respectively: Friuli-Venezia-Giulia in Italy and Navarra in Spain; a third one located in the Ontario region, Canada. The data were processed by using a multivariate structural equation in the multi-group version.
